Strawberries and Cream Torte


INGREDIENTS

1 pint fresh strawberries
1/4 cup sugar

Chocolate Crumb Crust:
1 1/2 cups chocolate wafer crumbs
6 tablespoons butter, melted
1 tablespoon sugar

Filling:
3 oz cream cheese, at room temperature
1 1/2 cups milk
1 4-serving-size package instant vanilla pudding mix
1 cup heavy whipping cream
Chocolate curls for garnish

DIRECTIONS

Pick out 8 of the prettiest strawberries for garnish. Thinly slice remainder into a bowl; stir in the 1/4 cup sugar. Let stand about 15-20 minutes to allow juices to form. ... Meanwhile, prepare crust by combining cookie wafer crumbs, melted butter and remaining sugar. Press into bottom and part-way up sides of a 10-inch springform pan. Place in freezer until ready to fill. ... For filling, beat cream cheese until fluffy. Gradually add milk, then pudding mix, mixing well. Mix in strawberries with their syrup. In another bowl, beat whipping cream just until stiff peaks form. Fold into pudding mixture; spread over chilled crust then refrigerate until firm, at least 2-3 hours. To serve, remove sides of pan; garnish with reserved whole strawberries and chocolate curls.
